In this journal produced by LCI, Hervé Mons presents all he is able to bring to his cheeses with the newly renovated “Tunnel de la Collonge ». The tunnel develops a unique eco-system which allows, in combination with the traditional and methodical care, to preserve all the qualities of their production in a particularly perfect environment. Laurent Mons made the point to explain that the cheese counters, where the MonS cheeses are displayed and sold in their 4 shops, have been made to produce conditions identical to those found naturally in the Tunnel de la Collonge, to ensure the final customer the very best quality.
