BOULETTE D'AVESNES
The boulette d'Avesnes is a French cheese originating from the North, from the Avesnois region in the Nord department. Recognizable by its conical shape and reddish-orange color, it is part of an ancient dairy tradition. Shaped by hand, each piece is formed into a cone, then carefully washed and salted, which gives it a washed, thin, and moist rind, characteristic of its identity.
Made from broken pieces of maroilles, ground and crushed, the boulette is based on a recipe passed down in local production sites, enriched with tarragon, parsley, pepper, a touch of clove, and paprika to achieve its color. This mixture gives a pronounced flavor and controlled strength, with a clear taste and a lingering finish that never becomes harsh. Its soft paste has a supple, slightly fatty texture, expressive and balanced.
Among the different versions that exist (pasteurized, thermized, or raw), we work here with a carefully chosen Avesnes ball made from raw cow's milk. Our priority is to preserve its expression throughout the aging process, with respect for time and patience. The gaze on each piece precedes each gesture, in order to achieve the rightness of the moment.
Supported by a regional designation and a brotherhood, the boulette is part of a cheese history of the North where taste takes precedence over appearance. It differs from other cheeses in the region by its unique shape and by a frank, readable, and distinctive aromatic profile.
You can enjoy it simply on a cheese platter from the North. It pairs well with an amber beer or a dry white wine and also finds its place in hot dishes for an original aromatic touch. Served at room temperature, its texture and flavors are fully expressed.
