Nestled in the heart of the Monts du Forez, in the picturesque village of Sauvain, the Fromagerie des Hautes Chaumes embodies a rich cheesemaking tradition passed down through generations.
Established in 1999 by Hubert Tarit, a third-generation cheesemaker, the dairy specializes in crafting the Fourme de Montbrison AOP, an artisanal blue cheese made from raw cow's milk. In 2020, sharing the same values of tradition and excellence, Hubert entrusted the fromagerie to Hervé Mons, Meilleur Ouvrier de France, who continues to uphold and evolve this cheesemaking heritage.



Milk Collection & Production
The dairy sources its milk from local producers in nearby communes. The cows are fed hay in winter and graze on grass during the summer months, ensuring high-quality milk that contributes to the unique flavor of our cheeses.
All our cheeses are handcrafted using raw milk, adhering to traditional methods that highlight the authenticity and richness of our terroir.
Aging in Natural Caves
The aging process of our Fourme de Montbrison AOP, as well as our tommes and fourmettes, takes place in a natural cave traversed by fresh spring waters. This environment provides the ideal humidity and temperature conditions necessary for the development of the cheeses' distinctive flavors and textures.

Our on-site shop offers a selection of our artisanal cheeses and regional products. We also organize workshops and guided tours of our aging caves, providing an immersive experience into the world of traditional cheesemaking.
