The Artisanal Cheese Factory of Sauvain
The Sauvain artisanal cheese dairy, located in the Monts du Forez, produces Fourme de Montbrison AOP from local raw milk. Since 2020, it has been run by Hervé Mons. The cheeses are aged in natural cellars, and the dairy offers workshops and tours to learn how this traditional cheese is made.
