As is often the case, it all started with a meeting — with David Ladu, back when he was still a teenager living in Le Castellas, nestled in the mountains of the Luberon. His father, a Sardinian shepherd, had passed down both his flocks and his deep-rooted traditions. The sheep graze on a dry, windswept plateau — untouched by noise or pollution — in a climate typical of that slightly wild corner of Provence, where life moves at its own rhythm. Only raw milk, no added cultures, just a few drops of rennet and a good dose of know-how. The result? A burst of flavor with remarkable finesse.
