Maison Mons, renowned for its expertise in aging artisanal cheeses, relies on unique structures to guarantee the quality and authenticity of its products. Discover the iconic locations that embody our passion for cheese:

In 2016, in Saint-Haon-le-Châtel, brand-new aging caves were constructed with a unique and innovative design, now patented.
These caves, where technology serves tradition, allow us to offer exceptional quality cheeses.
Over 250 cheeses are continuously aged in our caves, enabling us to control, care for, and monitor our products meticulously.
Aging is a crucial step in revealing a cheese's quality and characteristics. It develops texture, aromas, and rinds.
It's the result of a complex alchemy between ambiance, location, time, and specific care given to each cheese.

Maison Mons has expanded its presence through boutiques and distributors across France and exports its exceptional cheeses to over 30 countries worldwide, including the United States, Italy, Sweden, and Japan.

Located in the commune of Saint-Haon-le-Châtel, in the Loire (42), right next to our aging site.
"Beyond a project, it's a real desire to go further in our work."
We established the dairy in 2016.

In October 2020, Hervé Mons furthered his commitment to exceptional terroir by acquiring the Fromagerie des Hautes Chaumes in Sauvain, joining the AOP Fourme de Montbrison.
