GAPERON FERMIER
The Gaperon is a raw cow's milk cheese from the Limagne plain, in the Auvergne. Studded with garlic and pepper, it has a bold, distinctive character. On a cheeseboard, it stands apart from softer styles and brings a lively, fragrant note. It is a regional speciality we chose for its personality, found among our cow's milk cheeses.
Beneath a thin bloomy rind, the paste is supple and stays creamy. Garlic and pepper appear from the first cut, worked into the curd, giving the Gaperon a frank flavour. The balance comes from the tension between the roundness of the milk and the sharpness of the seasoning. We follow each piece in our selection so we can offer it when its taste is right. At the table, it lends itself to many uses. Sliced over country bread, it shows its full character. Diced, it lifts a salad or an aperitif board. Melted over warm potatoes, it adds depth to a simple dish. This Auvergne Rhône-Alpes speciality pairs well with a full, structured red wine.
