Livarot is a French soft-ripened cheese with a washed rind, originating from the Normandy region, more precisely from the Pays d’Auge, in western France. Livarot is a cow's milk cheese, protected by the AOP designation, which guaranties its origin, quality, and adherence to an ancient Norman manufacturing tradition.
Its cylindrical shape, orange color, and the strips of sedge that surround it earn it its famous nickname of "colonel." These natural plant ties help to hold the piece together during aging. This strong visual detail is an integral part of its identity and reputation.
Livarot has a soft paste, creamy texture, supple and slightly elastic, which becomes more melting with the duration of aging. Its washed rind, regularly washed and brushed, develops a powerful aroma, a salty, frank, and distinctive taste, while remaining balanced. In the mouth, the texture is rich, the animal note is controlled, and the persistence is long.
This assertive character appeals to lovers of strong cheeses and Norman regional specialties. It is a cheese with character, deeply rooted in regional gastronomic history, documented as early as the 17th century in local writings, particularly around the Bellou manor and the villages near Orbec, Lisieux, and the Touques River.
La fabrication est assurée par des fromageries locales. The respect of the AOP specifications requires a slow aging process and regular washing of the rind, ensuring an aromatic expression faithful to its Norman origin.
