SAINT ROMAIN
Saint Romain is a signature creation from Maison Mons, a raw cow's milk cheese recognised by its glossy black rind. Inspired by the Jura tradition, it pays homage to the Gamay Saint-Romain grape of the Côte Roannaise, whose marc extract is used to wash and colour its rind. Beneath a glossy black rind, Saint Romain holds a supple, melting paste. Ageing happens in two stages: first in a warm cellar, then twelve months in the Tunnel de la Collonge. Its dark colour and character come from the care given to the rind and from washing it with Gamay Saint-Romain marc extract. On the palate, the raw milk comes through with notes of fresh milk, toasted bread and butter, held in balance. The paste keeps a clean cut, which makes it easy to serve. On a board, it sits well alongside milder cheeses. In the kitchen, it melts nicely over a gratin, potatoes or a warm tartine. Serve it at room temperature, with a glass of Côte Roannaise Gamay or a craft blond beer. It is part of our Maison Mons creations.
