Cantal Aged 240 Days: A Cheese of Character and Intensity

From the very first bite, whey and acetic notes emerge gracefully, soon followed by hints of fragrant flowers. Its brown, buttoned rind reveals a deep yellow paste, dotted with the signature fermented grains of well-aged Cantal.
On the palate, salted butter gives way to explosive animal notes, which gradually mellow into a subtly bitter finish. The texture transforms throughout the tasting: the grains break apart, then melt into a buttery smoothness.
