Cantal Vieux is a classic among the mountain cheeses of Auvergne, aged here for at least 240 days. A raw milk cheese, it is made exclusively from the milk of Salers cows, the breed native to the Massif Central. Its long stay in the cellar gives it a frank flavour and real presence on a board. Well aged, it keeps without trouble. A characterful cheese under AOP appellation, born in the mountains of Auvergne-Rhône-Alpes.

Beneath a brown, buttoned rind, the paste is deep yellow and dense, dotted with the fermented grains that mark a well-aged Cantal. On the palate, whey and acetic notes open the tasting, followed by floral aromas, then salted butter and frank animal notes that close on a faintly bitter edge. The texture shifts as you cut: the grains break apart first, then melt. This comes from a long maturing in the cellar and from a single choice of milk, that of the Salers herd raised by Géraud Delorme. Cantal Vieux belongs on a board of cow's milk cheeses as much as in the kitchen: in thin slices, melted into a truffade or a gratin, tucked into a sandwich. It pairs with a full-bodied red wine or a craft beer, on good country bread.
A symbol of the Auvergne mountains, Cantal cheese has been crafted since time immemorial by teams of “cantalous,” heirs to a tradition that spans over a thousand years.
