FUMAISON
Le Fumaison is an exceptional cheese, known for its characteristic smoky flavor and creamy texture, achieved thru artisanal smoking. Original creation of a dairy located in a mid-mountain area in Auvergne, Fumaison is inspired by the making of sausages that were wrapped in a net and then hung in chimneys to dry while taking on a good smoky flavor.
Original creation of a dairy located in a mid-mountain area in Auvergne, Fumaison is inspired by the production of sausages that were wrapped in a net and then hung in chimneys to dry while taking on a good smoky flavor. Our Dairy makes it with raw milk, and it is naturally smoked with cold smoke from our smoker, then matured in the Collonge Tunnel. Cut into small cubes, the Fumaison proves particularly popular as an aperitif.
