Lingot de Saint-Nicolas is a farmhouse raw sheep’s milk cheese, produced by the community of the Monastery of La Dalmerie, in the heart of the Cévennes.
Its distinctive feature lies in the infusion of the milk, carried out immediately after milking with thyme harvested from the surrounding garrigue. The milk is then slowly set, the curd is pre-drained in cloth bags and finally moulded.
After an initial stay in a ventilated drying room to initiate rind development, the lingots continue their maturation in a humid cellar. This stage encourages the formation of a fine creamy layer beneath the rind and brings the delicate texture that defines this cheese.
Visually, it shows a fine white rind and a white, close-textured and even paste.
On the palate, the texture is first dense, then becomes beautifully melting. The aromas evoke sheep’s fleece and fresh milk, with a very clear herbal note of thyme on the finish.
A small, original and delicate sheep’s milk cheese, with a strong personality and a deep connection to its Cévennes terroir.
