PYRENEES BREBIS
A close cousin of the Ossau-Iraty AOP, Pyrénées Brebis is aged in our Saint-Haon-le-Châtel cellars from a very young age.
This mild sheep’s milk cheese is a close relative of Ossau-Iraty AOP, made with whole milk collected from partner farms in the heart of the Basque Country. The local breeds — Basco-Béarnaise, Manech Red-Faced, and Black-Faced Manech — are perfectly adapted to the region’s lush, rolling hills. The wheels arrive around 10 days old and are carefully tended by our affineurs in Saint-Haon-le-Châtel for at least 3 months. This patient aging process allows the cheese to develop its smooth texture and subtle, balanced flavors — a fine expression of the Pyrenean tradition.
