Created in collaboration with one of our Auvergne producers, this unique blue cheese, named 1924, brings together the best cow’s and sheep’s milk in a veined paste with a powerful yet balanced character. Inspired by the Auvergne terroir, it pays tribute to two great traditions: that of Bleu d’Auvergne AOP in the north and Roquefort AOP in the south, while asserting its own origin and strong personality. Why 1924? It’s the year preceding the Roquefort’s AOP designation. So, with a bit of imagination…

Beneath its natural rind, its dense paste reveals a fine and even veining. Slowly aged in humid cellars in the Loire region, 1924 develops a creamy texture and a bold flavor, blending notes of noble mushroom, hazelnut, and fresh cream. Every step of its production and aging is precisely controlled to preserve the quality of the pasteurized milk and the aromatic richness typical of cheeses from Auvergne.

On the palate, this cheese offers a long, refined, and lingering flavor. Serve it at room temperature on a slice of lightly toasted rye bread to enhance its natural complexity and subtle aromas. It pairs beautifully with a sweet wine such as Sauternes, or a bold red like Cahors, which reveals all the depth of this blue of France.
