CARRE DE SAINT VICTOR
The Carré de Saint Victor is a raw goat's milk cheese that brings a soft, sunlit note to a cheeseboard. The milk comes from the Provençale goat, a hardy breed, and the cheese is made in the Auvergne Rhône-Alpes region. Naturally higher in fat, this milk gives a dense, melting paste with little acidity, rare for a goat's cheese. Its rind is scattered with edible flowers. A farmhouse piece, both delicate and generous.

Beneath a thin, flowery rind, the paste is dense, supple and melting. That is the signature of the Carré de Saint Victor, created by Maison Mons and Yannick, a passionate and experienced cheesemaker: a raw goat's milk that is naturally rich, giving a firmer texture than most goat's cheeses. On the palate it stays soft and round, milky, with very little acidity. The edible flowers on the rind add a vegetal note and real visual presence when the cheese is cut.
On a board, it brings colour and roundness. Enjoy it as it is, at room temperature, so the paste can soften. It also works on a slice of country bread, or in a seasonal salad. For a pairing, a crisp, dry white wine such as a white Côtes du Rhône or a Sancerre suits its gentle character. Find it in our selection of goat's cheeses.
