Beaufort is a true mountain cheese, and its unique concave rind tells the story — shaped that way to allow a rope to hold it in place during transport on the backs of men or mules. Traditionally made in summer when herds were gathered in high alpine pastures, Beaufort has been traded between the Savoy mountains and Turin since as early as the 13th century. Today, we carefully select the finest wheels and age them for many months in our Tunnel de la Collonge, bringing out all the depth and elegance this iconic cheese has to offer.
