BEAUFORT AOP
Selected with great care and then slowly matured in our Tunnel de la Collonge, this Beaufort AOP embodies the excellence of mountain cheese from Savoie. Its pressed, cooked paste is supple and melting, developing a buttery texture and a fruity flavour, highlighted by delicate floral and slightly nutty notes. Essential on a cheese platter, it captivates both with its taste and its story. A flagship cheese of Savoie, Beaufort has historically been produced at high altitudes in the alpine pastures of Beaufortain, Tarentaise, Maurienne, and Val d’Arly. Made from raw cow's milk, primarily from the Tarine and Abondance breeds, it adheres to strict specifications related to its protected designation of origin (AOP).

Its famous wheel with a concave heel is no coincidence: this shape once made it easier to transport on the backs of men or mules in mountain valleys. Traditionally produced in the summer when herds graze on alpine meadows, Beaufort fully reveals its character after several months of ageing.
Today, we select high-quality pieces, allowing them to mature slowly in our tunnel to preserve their aromatic richness, the finesse of the ivory to pale yellow paste, and the consistency of the texture. When tasted, this rich and mild cheese lends itself to many occasions: sliced on bread, in Savoyard fondue, in a gratin, or simply enjoyed on its own. It pairs perfectly with a white wine from Savoie or a light red wine, which highlights its delicate aroma without overshadowing its identity.
Our matured Beaufort is available for sale with careful cold chain delivery, ensuring optimal preservation until it reaches your refrigerator.
