The Dragonnet – a Maison Mons exclusive.
After several years in Provence, the harsh climate led Yannick and Cyril to move their herd of 150 Provençale goats from the Alpes-de-Haute-Provence to the Monts d’Ardèche. They settled in the village of Saint Victor, perched on a mountainside, on a beautiful and rugged farm perfectly suited for daily free-range grazing by their agile goats.
With his rich cheesemaking experience, Yannick crafts this little gem: the Dragonnet.
The milk from the Provençale — a rustic and resilient breed — is naturally rich, giving the cheese a dense, creamy texture that’s rare for goat’s milk, and a mild flavor with very low acidity.
Its classic shape allows for slow, even ripening, helping it develop balanced, nuanced aromas.
The result? A round, mellow, well-balanced cheese with just a hint of goaty character — a standout among goat cheeses.
