BRIE DE MELUN AOP
French soft cheese with a bloomy rind, Brie de Melun PDO is made from raw cow's milk using a traditional production method that allows time and natural fermentation to play a key role. Originating from a well-defined terroir in Île-de-France, this cheese is distinguished by a more pronounced flavour than that of Brie de Meaux, with a bold taste and a strong character. The protected designation of origin regulates practices without ever restricting the expression of the raw material.
The selection begins with the milk, chosen for its richness and its ability to evolve slowly. The primary maturation of the milk, carried out with patience, prepares a predominantly lactic curd and shapes the character of the cheese right from the start. This initial phase requires attentive observation: minimal intervention, but at the right moment.
The ripening process allows Brie de Melun to find its true balance. The bloomy rind, white in colour with streaks of red or brown, develops gradually, while the paste gains a creamy texture without losing its firmness. On the palate, the cream reveals its depth: evolved herbaceous and lactic notes, sometimes slightly animal-like, with controlled intensity and a lingering finish. The balance strikes between strength and finesse, without excess.
Tasting is ideally done at maturity, when the paste is supple and fully expressive. This Brie naturally pairs with toasted bread and fits perfectly on a cheese platter. It is best enjoyed with a glass of oaky red wine or a blonde beer.
