Produced according to the traditional know-how of the Jura, this Comté Réserve is aged for more than 30 months in the Tunnel de la Collonge. The unique, carefully controlled conditions of this tunnel allow the cheese to mature slowly, enhancing its depth and complexity.
Over time, the texture becomes firmer while remaining supple. On the palate, flavours unfold with notes of dried fruits, brown butter and subtle roasted nuances, leading to a long and refined finish. A distinctive Comté designed for lovers of long-aged cheeses.
