Beneath its slightly wrinkled white rind, the cheese reveals a bright white paste. On the palate, it expresses herbaceous notes, a subtle goaty character, and the freshness of raw milk. The texture is dense and creamy, with a silky grain that melts smoothly while maintaining body.
Aged between 15 and 20 days, this cheese reaches its perfect balance of finesse and intensity at this stage of maturation.
