Mistralou is crafted by a young couple of farmstead producers who rolled up their sleeves to revive a nearly abandoned farm.
Step by step, they rebuilt their herd — mostly composed of Rove goats, a rare local breed on the verge of extinction.
The goats graze freely in a wild, exceptional landscape, which gives the cheese its ever-changing, yet always delightful aromas.
Wrapped in a chestnut leaf — a nod to the traditional Banon cheese — Mistralou carries with it a gentle, woody scent that speaks of its roots.
