Made from raw milk. A true Burgundian cheese with character — bold in flavor, yet wonderfully subtle.
A flagship cheese of Burgundy, Époisses is said to have been created by Cistercian monks in the village of Époisses as early as the 15th century. Back then, it was collected from local farms by traveling merchants, who carried it to Dijon, Lyon, or Paris. The cheeses continued to mature along the way, gaining strength and depth during the journey. Yet this iconic cheese nearly disappeared after World War II, due to sweeping changes in agriculture. Thankfully, Mr. Berthaut — later joined by Mr. Gaugry — revived production in 1956. And the rest is delicious history.
