A bold Gruyère, slowly aged in natural cellars.
This cheese hails from the mountainous region surrounding the picturesque medieval village of Gruyères, in the Swiss canton of Fribourg. Traditionally, local farmers would gather their herds and take them to graze in the high Alpine pastures during the summer months. The larger volumes of milk produced during this time allowed for the making of Gruyère — a cheese meant to be aged and enjoyed throughout the winter. These wheels are aged slowly in the stable, natural atmosphere of traditional caves, where they develop their signature depth and intensity.
