A rare farmhouse raw-milk Langres, crafted by the Remillet family and matured by our affineurs to reveal all the finesse of this iconic cheese.

Originally from the plains of Haute-Marne, the farmhouse raw-milk Langres AOP made by the Remillet family stands out with its orange rind and its famous hollow – the hallmark of a cheese that is never turned during ageing. Beneath its lightly wrinkled surface, which may suggest a powerful cheese, it reveals instead a soft and creamy paste, with a very milky profile and delicate animal notes, reminiscent of a winter cowshed.

Made exclusively from the Remillet farm’s raw milk – the last farmhouse producer within the appellation – this Langres expresses with great clarity its origin and the care given both to the herd and to the cheesemaking. Its light, mousse-like texture, golden colour and well-balanced aromas, both fresh and distinctive, make it a cheese of character, rustic in spirit yet truly fine and elegant.

Carefully matured and tended by our affineurs in our cellars, it develops the unique texture that defines Langres. And for those who enjoy tradition, its hollow naturally invites a splash of Marc de Champagne.
