From the Pays de Bray, Neufchâtel AOP is a cheese deeply rooted in its terroir and in generations of craftsmanship.
We love it for its fine, delicate texture, its fresh, lactic notes and its ability to develop more character over time, while always remaining beautifully soft and creamy.
And while its heart shape has become a symbol, it is first and foremost part of its long-standing tradition.

An emblematic cheese of the Norman bocage, Neufchâtel AOP is produced and matured exclusively within a very small and strictly defined area, around Neufchâtel-en-Bray.
It is made from locally collected milk, sourced from producers fully committed to the AOP scheme, mainly from herds of Norman cows, raised on pasture for a large part of the year.
A demanding farming approach, at the very heart of the cheese’s identity.
Neufchâtel is a lactic soft cheese with a white bloomy rind. It stands out for its distinctive know-how: the curd is drained and then gently pressed before moulding. This step, which is rare for lactic cheeses, gives the cheese its particularly smooth, fine and even texture.
On the palate, it offers a soft and creamy mouthfeel, with fresh, milky notes when young. As it continues to mature, it develops a more pronounced character, while always retaining its balance and delicacy.
