MAROILLES FERMIER AOP
Our farmhouse Maroilles AOP is a landmark among the cheeses of Northern France: a raw milk cow's milk cheese with a supple paste and a bold character. Made in the Hauts-de-France region using farmhouse methods, it carries an AOP appellation and is recognised by its washed rind and its frank, open aromas. On a cheeseboard, it brings depth and holds its own next to milder cheeses.
Beneath its washed rind, brushed regularly throughout ageing, our farmhouse Maroilles AOP holds a supple, melting paste. The nose is powerful and pronounced, while the palate stays balanced: a milky roundness, a controlled strength, a long finish. This patient cellar work is what gives the cheese its structure and its expression. The humidity of the cellar and the rhythm of the care do the rest.
We select this Maroilles from a farmhouse producer, then follow it to its point of balance. Its versatility makes it as comfortable on a board as in the kitchen, alongside our other cow's milk cheeses. Enjoy it as it is, or use it in the classic tarte au Maroilles, in a gratin, or melted over potatoes. For pairing, stay with the generosity of the North: an amber beer, a country loaf, or a rounded white wine are enough to show it at its best.
