After 18 months of ageing, Mimolette reveals a rich and expressive flavour profile. Its paste becomes firm and sometimes slightly crystalline, while remaining pleasantly smooth on the palate.
The flavours evolve towards notes of dried fruits, hazelnut and butter, offering a fine balance between intensity and indulgence. A matured cheese enjoyed both on a cheeseboard and in cooking.
