An absolute icon of Italian gastronomy, Parmigiano Reggiano represents the precision of traditional craftsmanship and the nobility of long-aged cheeses. This selection comes from our partner affineur Cravero, renowned for its rigorous and expert selection of the finest wheels.
Made from raw cow’s milk using time-honoured methods, it is slowly aged for a minimum of 24 months. Each wheel is carefully handled — turned, brushed and oiled — allowing the cheese to develop its full aromatic complexity and distinctive texture.
Its golden-yellow paste is both crumbly and crystalline, dotted with crunchy tyrosine crystals that reflect its long maturation. On the palate, it delivers remarkable intensity, with notes of dried fruits, warm milk, noble fermentation and hints of white wine, all supported by a refined salty structure and long finish.
Powerful yet elegant, it can be enjoyed in shards, flakes or simply on its own. A signature cheese that fully expresses the depth of time and craftsmanship.
