An artisan raw milk goat's raclette, with a surprisingly fine, smooth texture. Made by the Laiterie de la Côte Roannaise.
Approx wheel weight: 6 kg.
The smooth, lightly orange rind hints at an ivory paste, supple with a few discreet openings. Once cut, it surprises with its finesse: more delicate than a classic raclette, it melts with real smoothness. The goaty character comes through subtly, carried on a buttery thread that lingers into a lovely almond finish.

Raclette is a traditional mountain cheese, typically melted using a raclette machine or over a wood fire, and much loved alongside potatoes and cold cuts. This artisan version, made from local raw goat's milk, offers a surprising alternative to classic raclette cheese, thanks to its finesse and remarkable smoothness.
The raw goat's milk is collected daily from partner producers. Strongly inspired by the know-how of our Swiss and Savoyard neighbours, this artisan recipe relies on the pressed, uncooked-paste technique, with pressing still done the traditional way.
At the begining of the aging, the cheeses are washed weekly. They're then laid out on tablards (those large spruce wood boards) where they're turned and rubbed for at least sixty days. All of this care takes place at the heart of our caves, in Saint-Haon-le-Châtel, ensuring carefully controlled quality at every stage.
Place the chèvraclette slices in the raclette trays and let them melt, then sprinkle lightly with thyme before serving with an assortment of cold cuts and potatoes. It pairs well with a dry white wine from Savoie.
