Originally made from goat’s milk, Saint-Marcellin gradually spread throughout the Dauphiné region and transitioned over time to cow’s milk. While traditionally eaten dry in its birthplace, it’s known as “affiné à la Lyonnaise” when aged to a soft, creamy texture.
