ST NECTAIRE Fermier Lait de Salers aop
Saint-Nectaire AOP made with Salers milk is a mainstay of any Auvergne cheese board: a raw-milk farmhouse cheese produced solely from the milk of a single Salers herd. From the Auvergne-Rhône-Alpes region, it carries a supple, melting paste under a cave-worked rind. This is a cow's milk cheese with real character, AOP certified, equally at home sliced or at the close of a meal.
Beneath the rind, the paste of this Saint-Nectaire made with Salers milk is supple and melting, carrying notes of hazelnut, cellar and undergrowth. Raw milk from a single herd gives the cheese a frank expression, balanced between mildness and length on the palate. By tradition it is aged on a bed of rye straw for at least 70 days, the time it takes for the rind, the flora and the flavour to settle. It is patient work, followed closely in our cellars.
Its versatility makes it as suited to everyday meals as to fine tables. Enjoy it sliced, on a board of cow's milk cheeses, but also melted over warm potatoes, layered in a sandwich, or folded into a gratin. To pair, a light red or a dense country bread is enough to bring it forward.
