Our Tomme de Tarentaise is an uncooked pressed paste cheese, made from raw cow's milk, from the mountain areas of Savoy, in the Auvergne-Rhône-Alpes region. With its supple texture, it belongs to the lineage of traditional Alpine tommes. The tasting holds two registers, gentle first, then more characterful with time. An approachable wheel, equally at home on a cheese board or in the kitchen.
Beneath its natural rind, the paste of the Tomme de Tarentaise stays tender and supple. The raw milk speaks softly, with lactic notes and fresh hazelnut, lifted by more rustic accents that cave time installs little by little. Affinage, conducted patiently, gives the wheel an even hold and a measured aromatic depth, without excess.
At the table, it offers several readings. On a board, it brings balance between more assertive cheeses and softer pastes. In the kitchen, it melts cleanly, gratinates without collapsing, and slips easily into a reworked tartiflette, a hot tartine or a rye bread sandwich.
