An iconic English cheese, Westcombe's PDO cheddar is made from raw milk in Somerset, in the southwest of England. Cheddar is a pressed, uncooked cheese that is part of an ancient cheesemaking tradition, maintained by a family-run business committed to consistent craftsmanship and high-quality ingredients. The selection of milk, sourced from the same origin, determines the balance and final expression of the cheese.
The production relies on precise, consistently repeated steps. The curd is processed using the traditional cheddaring method, then slowly pressed. This demanding and physical handling of the curd structures the texture and prepares the development of its flavours. Each piece is then patiently aged under controlled conditions until the right moment is deemed.
Visually, the paste’s colour ranges from ivory white to natural orange hues, sometimes streaked with blue. The texture is firm, slightly crumbly, yet melts in the mouth. The flavour is rich and balanced, without excess: lactic notes, a fruity touch, and a progressive depth that comes with time. This variety of expression reminds us why cheddar is one of the most consumed cheeses in the world, far beyond its standard uses.
This cheddar is best enjoyed simply, at room temperature, in slices or shards. It can also be used in cooking, in a hot recipe, a burger, a tapa, or as part of an aperitif, without losing its identity. It pairs perfectly with a dark beer or a spicy red wine.
