Time itself has been allowed to do its work, letting nature reclaim the land freely grazed by his Rove goats.
Tucked away in a secluded valley, at the heart of a 120-hectare wild and uncultivated massif, this shepherd walks a different path — far from industrial farming — restoring the nobility of the word paysan.
The result is a burst of aromas: the dry fragrance of sun-drenched garrigue, a bouquet of wild thyme blossoms, and the earthy scent of a clay-walled cellar.
