Little gem of the Loire Valley, Couffy is a farm goat cheese born in the heart of Sologne, notably in Couffy and Villequemoy. Made from raw goat's milk, this artisanal product reflects all the traditional know-how of the region and the richness of its terroir.
Its farm production is passed down from generation to generation: the raw milk is worked by hand, slowly curdled, then carefully molded to preserve all the aromatic finesse of the goat cheese.
Each Couffy cheese, delivered young, is placed on rye straw, where its natural aging begins in our cellars.
Under its thin and slightly wrinkled rind, one discovers a melting paste, with a creamy and supple texture, with milky and vegetal notes. The farmer's Couffy evolves gently: the goat aromas gain in intensity while remaining delicate, with a touch of elegant acidity.
It offers a soft and fresh taste; more refined, it reveals a more assertive character, typical of artisanal goat cheeses from the Loire Valley. This local cheese can be enjoyed on a platter, during a tasting, or at the end of a meal with a Sauvignon Blanc or a Touraine wine, accompanied by a little fine charcuterie.
