Pont-l'Évêque AOP is one of the great classics among Normandy cheeses, and a piece you will happily find on a characterful cheeseboard. A washed-rind cow's milk cheese from the Pays d'Auge, it is recognised by its square shape, its thin, lightly orange rind and its supple paste. As a family house and cheese affineur, we select it among our PDO cheeses for its balance, between milky roundness and a more assertive finish.

Beneath the washed rind, the ivory paste is supple and creamy without running. Affinage calls for regularity: the rind is washed and watched until it reaches the lightly orange tone that signals a cheese at its peak. On the palate, Pont-l'Évêque AOP opens on milky, buttery notes before a franker finish, typical of washed-rind cheeses. On a board it sits easily alongside other Normandy specialities, at the end of a meal or with an aperitif. It also works in the kitchen: melted over potatoes, slipped into a toasted sandwich, it keeps its body. For pairing, a dry Normandy cider remains the reference, with a country or walnut bread.
