A little farmhouse triangle of raw milk goat cheese, studded with peppercorns : tender, spiced, and dangerously moreish. Made in Provence-Alpes-Côte d'Azur (Bouches-du-Rhône).

Te wrinkled rind, flecked with peppercorns, gives way to a white paste that's dense and a touch sticky at first bite, then turns silky. On the nose it's woody at the surface with a light goaty note at the core; on the palate, a milky finesse that finishes with a peppery kick. Eat it with the peppercorns or pick them off, your call, and try pairing it with slices of nectarine and a handful of crunchy walnuts. A spicy red from Provence or the Ventoux, or a honeyed amber beer, rounds it off nicely.

Up in Haute-Provence, on an isolated stretch of hillside where goats graze, this farmhouse raw milk cheese owes its name to a bit of playful imagery: the long, curved horns of the Rove goat, said to bring to mind the devil's trident. There's nothing sinister about the cheese itself though, this farmhouse goat cheese, unless you count how hard it is to stop at one bite.

The natural sweetness of goat's milk gets a lift from whole peppercorns pressed in partway through ageing. That spiced touch is what gives this little triangle its character: tender and punchy all at once.

Hand-shaped using a demanding lactic-set technique, the Corne du Diable then spends around forty days ageing in our goat-cheese cave kept at low humidity, until its signature wrinkled rind takes shape.
