A classic Pyrenean cow's milk tomme, soft and satisfying, with an orange rind. An easy, everyday cheese you'll want on repeat. Made in Ariège (Occitanie).

Approx piece weight: 4.5 kg.

Under its thick, orange rind, the paste is airy and pale ivory, with a soft, supple bite that firms up slightly with age. The nose is warm and milky, with a hint of custard; on the palate, it's mild and mellow, with hazelnut notes and a light peppery edge, finishing on a rounded, milky note. We'd suggest it simply, as part of an aperitif, or put to work in the kitchen : in a gratin dauphinois, a Savoyard fondue, or pan-fried with a drizzle of honey and a few walnuts. It pairs well with a floral white like Irouléguy, a spicy red, or an amber beer.

Bethmale is the Pyrenean cow's milk tomme in its purest form: an everyday cheese, the kind you cut into without ceremony and always come back for. It takes its name from the Bethmale valley in Ariège, once a thriving centre of mountain pastoralism, now wild and quiet, where stone walls and old shepherd's huts still trace the region's long cheesemaking history at the heart of the Pyrenees.

Made from pasteurised cow's milk, collected from local producers in the Couserans, the curd is cut and stirred, then moulded and mechanically pressed before a brine salting.

It's then aged in a humid cave on spruce boards, with the rind regularly moistened and the cheese turned, until the paste reaches its full softness after around three months.

Enjoy it simply, on a cheeseboard with a slice of country bread, or melted into your winter dishes.
