A Corsican pasteurised sheep’s milk cheese, Brebis Fougère stands out with its orange washed rind decorated with a fern leaf. Beneath its creamy layer lies a firmer, more expressive centre, offering a balanced profile of animal, yeasty and subtly herbal notes.
Produced in Corsica, Brebis Fougère is a distinctive washed-rind sheep’s milk cheese inspired by traditional island practices. Its orange striped rind, marked with a fern leaf, recalls the vegetal wrapping once used to protect and transport cheeses across the rugged maquis landscape.
Under the rind, a thin creamy layer gradually develops, surrounding a dense paste that can appear slightly chalky at mid-ripening before becoming softer and more supple over time. On the palate, it reveals a pleasant contrast between a pronounced, slightly animal character on the rind and a mellow, lactic sweetness in the heart.
Versatile and indulgent, it can be enjoyed simply with fresh bread, or enhanced with a drizzle of honey to highlight its floral dimension and creamy richness. It pairs beautifully with spicy red wines such as those from Calvi, or with amber ales that complement its warm, savoury profile.
