A large farmhouse goat’s milk cheese made from raw milk, Saint-Christophe offers a refined, dense texture and a balanced flavour combining fresh lactic notes, mushroom aromas and a gentle tangy finish.
Crafted by passionate young farmers Mélanie Gonon and Jean-Philippe Ducroux, Saint-Christophe is an artisanal goat’s milk cheese inspired by the traditional Charolais style. Its fine white paste develops a dense yet silky texture that gradually softens and melts as it ripens.
Its lightly ridged ivory rind, sometimes marked with delicate bluish hints, protects an expressive interior revealing aromas of fresh mushroom, tender herbs and sweet milk. On the palate, it delivers remarkable balance between mild caprine character, lively freshness and lasting aromatic depth.
Carefully matured in our ageing cellars, it becomes a true centrepiece for an elegant cheese selection.
